When the weather cools down, there’s nothing better than the scent of baked apples filling the kitchen. These Lucy™ Baked Apples with Oat Crumble are sweet, spiced, and irresistibly cozy — the perfect simple dessert that feels special but takes just minutes to make. With a buttery oat-pecan topping and a pop of Lucy’s signature pink hue, they’re as beautiful as they are delicious.
Ingredients
Apples:
3 Lucy Glo or Lucy Rose apples
1 tablespoon unsalted butter, melted
Oat Crumble Topping:
½ cup old-fashioned oats
½ cup pecans, chopped
¼ cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon cinnamon
¼ teaspoon cardamom
Pinch of salt
3 tablespoons unsalted butter, melted
For Baking:
Apple cider (or water)
Instructions:
Prep the Apples: Preheat the oven to 350°F degrees. Slice each apple in half lengthwise and scoop out the core with a melon baller or spoon to create a well. Arrange the apple halves cut-side up in a baking dish and brush the tops with melted butter.
Make the Crumble: In a medium bowl, mix together oats, pecans, brown sugar, flour, cinnamon, cardamom, and salt. Pour in melted butter and stir until the mixture is evenly coated.
Assemble: Spoon the crumble generously into each apple half, pressing lightly so it sticks. Pour a thin layer of apple cider (or water) into the bottom of the baking dish — just enough to cover the bottom. This prevents burning and helps steam the apples as they bake.
Bake: Bake for 25–30 minutes, or until the topping is golden brown and the apples are tender but still hold their shape.
Serve: Serve warm with vanilla ice cream, whipped cream, or Greek yogurt, and a drizzle of maple syrup.
