Like a pound cake, this lightly spiced loaf is a wonderful breakfast, snack, or home baked gift. When you go for a slice, you reveal the beautiful warm blush hue of the Lucy™ Glo apple that is baked inside.  The apple adds a lot of moisture to the loaf and makes your whole house smell amazing! This recipe is simple and comforting and can be made even easier if you want to forgo the homemade bread directions and simplify with a boxed pound cake mix.  The tart hint of sweet from the Lucy™ Glo, combined with the sweet dough is *chefs kiss.

Ingredients

  • 3 LucyGlo Apples
  • 1 ¾ c. all-purpose flour
  • ¼ c. brown sugar
  • ½ c. white granulated sugar
  • 1 ½ tsp. baking powder
  • 2 tsp. cinnamon 
  • 1 tsp. cardamom
  • ½ tsp. fresh ground nutmeg
  • 1 tsp. salt
  • 2 large room temperature eggs
  • ½ c. corn oil
  • ¼ c. milk of choice ( I recommend cow’s milk or oat milk as I have not tried other alternatives with this recipe.)
  • 2 tsp. vanilla extract
  • ½ c. honey

Frosting / Glaze

  • ½ c. powdered sugar
  • 1 tbsp. H2O

Directions

  1. Preheat your oven to 350°F. Spray a bread pan liberally with non-stick baking spray. (If your bread pan is smaller than 8×5, then use two pans or the batter will overflow.
  2. Peel, core and cut your Lucy™ Glo apples into slices, about ¼ inch thick and place into your prepared loaf pan.
  3. In a medium sized mixing bowl, combine the flour, sugar, baking powder, spices, and salt. Then add in all the wet ingredients. Mix until smooth, but do not over mix or your loaf will be tough. 
  4. Pour the mixture over the apples, making sure to get down in the hole of the core.  Tap your pan on the counter a few times to release any air bubbles. 
  5. Bake for 1 hour or until a wooden skewer inserted in the center comes out almost clean (We are looking for moist bread, and it will continue to cook a bit while it cools in the pan.)
  6. While the bread cools. Mix the powdered sugar and water.  If the consistency is too thin, add more powdered sugar, if it is too thick add in more water a few drops at a time, until it is to your liking.
  7. When the bread is still warm but not hot, drizzle the glaze over the top. Slice and serve!
  8. This bread will last in an airtight container for up to 5 days.
