Ingredients

1 Layer: 
  • 2/3 cup stevia-sweetened dark chocolate chips, melted
    1 scoop vanilla protein powder
    1/3 cup gf granola

Middle Layer:

  • 1 Lucy™ Glo Apple, chopped

Top Layer:

  • 1/3 cup natural (drippy) cashew butter
  • 1 scoop vanilla protein powder
  • 1/8 teaspoon almond extract

Toppings:

  • unsweetened coconut
  • cacao nibs

Directions

1. Mix together ingredients for first layer and distribute evenly into 6 muffin-tin cups that have been lightly sprayed with nonstick cooking spray. Distribute apple chunks in the middle of each cup, pushing down just a bit into the chocolate, but piling up on the chocolate as well.
2. Mix together ingredients for the top layer. Drizzle generously over each cup. Sprinkle with coconut and cacao nibs.
3. Freeze just until firm, then refrigerate and enjoy for breakfast and snacks for the week!

Pro tip: Cookie Butter Cups are delicious thrown into smoothies, or put into a bowl with oats and coconut milk as a cereal. They are great on-the-go too! Just bring a napkin for sticky fingers!
